This fantastic and healthy lentil casserole featuring brown rice is a great winter warmer and family favorite.

Serves 6-8 people

Ingredients
3/4 cup lentils
1/2 cup brown rice
3 cups broth (chicken or vegetable)
1 cup grated cheddar cheese
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder (use less if you aren’t a garlic fan)

Cooking Procedure
1. Preheat the oven to 300 degrees Fahrenheit / 177 degrees Celsius
2. Mix all the ingredients except for the cheese in a baking dish
3. Cover the baking dish with foil, and bake for 1 hour and 10 minutes.
4. Remove the foil, add the cheddar cheese, and bake the casserole for another 20 minutes.

Serve.
